Montate a crema i tuorli con lo zucchero. A parte montate a neve gli albumi.
Unite ai tuorli con lo zucchero la farina, il cacao e il lievito e mescolare. Infine unite anche gli albumi e amalgamate fino ad avere un composto omogeneo.
Versate il tutto in una teglia rettangolare rivestita di carta forno livellate bene e cuocete in forno statico a 180 °C per 10 minuti.
Quando sfornate togliete subito la carta forno e avvolgete la pasta su un canovaccio umido e la lasciate finchè non si raffredda del tutto.
Pulite le pere e tagliatele a cubetti piccoli, metteteli in una padella con il cucchiaio di zucchero, il rhum e un po’ di cannella e far cuocere per 5 minuti.
Spalmate la marmellata sul rotolo e distribuitevi poi i pezzi di pere, scolando l’eccesso del liquido. Arrotolate la pasta e decorate con il cioccolato fuso oppure tagliate a fette e fare delle monoporzioni.
Lasciate in frigo almeno un paio d’ore prima di servire.
