Per la crema:
500 gr di mascarpone
5 cucchiai di zucchero
5 uova
caffè
pavesini
cointreau
4 arance
1 limone
500 gr. di fragole

Spremere le arance ed i limoni, tagliare a pezzetti le fragole e metterle a macerare in mezzo al succo dei due agrumi.
Preparare la crema:
Montare a neve il bianco delle uova.
Sbattere i rossi con lo zucchero aggiungere il mascarpone e il cointreau.
Infine aggiungere gli albumi montati precedentemente.
Laviamo ora le fragole dalla marinatura in modo da poterci inzuppare i pavesini.
Mettere le fragole all’interno della crema e procedere alternando uno strato di pavesini inzuppati ad uno di crema con le fragole.
Lasciare in frigo per almeno due ore e guarnire con scaglie di cioccolato bianco.
