Lavorare a crema il burro con lo zucchero, unire i tuorli fino ad ottenere un composto soffice. Unire le mandorle, la farina di grano saraceno, il lievito, infine aggiungere gli albumi montati a neve con lo zucchero rimasto. Amalgamate il tutto mescolando dal basso verso l’alto.
Mettete l’impasto in una tortiera di 25 centimetri di diametro unta con un po’ di burro e infornate a 180 °C per 35-40 minuti.
Lasciate raffreddare la torta e tagliatela a metà orizzontalmente. Farcitela con uno strato di marmellata di mirtilli rossi e richiudetela. Spolverizzate con zucchero a velo e servite.
