Sbattete l’uovo con lo zucchero e la cannella. Aggiungete la marmellata di arance, la buccia d’arancia e di limone grattugiata e le carote sbucciate e grattugiate.
Aggiungete poi l’olio, la farina di grano integrale e il lievito e mescolate il tutto. Unite le noci tritate continuando a mescolare delicatamente.
Imburrate e infarinate uno stampo per torte. Versate il composto nella teglia e cuocete in forno a 180 º C per 30 minuti.
Sfornate e lasciate raffreddare. Decorate la torta con abbondante zucchero a velo.

Sciogliete il burro a bagnomaria, grattugiate la buccia di 1 arancia, sbucciate poi tutte e due le arance e tagliatele a pezzetti.Tritate grossolanamente metà delle noci e mettetele da parte.
Riprendete il burro fuso, aggiungete 200 gr di zucchero, le uova e lavorate con una frusta energicamente; aggiungete la farina, la scorza grattugiata dell’arancia, un pizzico di sale, il lievito e amalgamate per bene. Unite i gherigli di noce tritati, i pezzetti di arancia e mescolate.
Versate l’impasto nello stampo, precedentemente imburrato e infarinato, distribuite poi sulla superficie i gherigli di noci interi.
Cuocete a 180° per circa 45 minuti, sfornate e servite con abbondante zucchero a velo.

Lavorate i tuorli con lo zucchero fino a ottenere un composto spumoso e successivamente unire le mandorle, il semolino, la buccia grattugiata del limone e il liquore.
Montate gli albumi a neve ed incorporateli delicatamente al composto.
Imburrate e infarinate uno stampo a cupola, tipico del parrozzo e cuocete in forno caldo a 160° per circa 50 minuti.
A cottura ultimata lasciate raffreddare il dolce e nel frattempo preparate la glassa: in un pentolino fate sciogliere il cioccolato tritato insieme al burro, poi stendere la glassa dal centro del parrozzo fino a ricoprire l’intera superficie del dolce.

In una terrina versare lo zucchero, il vino, l’olio e per ultimo il lievito e la farina poco per volta. Amalgamiamo fino ad ottenere un impasto lavorabile.
Disponiamo il panetto sulla spianatoia infarinata e lavoriamo ancora un pò, poi formiamo dei bastoncini di pasta e creiamo le nostre ciambelline.
Passiamole nello zucchero semolato e posizioniamo le ciambelline al vino su una teglia foderata da carta forno.
Cuociamo a 180° per 20/30 minuti circa, regolatevi secondo la doratura.

Disponete la farina a fontana sulla spianatoia, versare nel centro lo strutto, l’uovo, i tuorli, lo zucchero e un pò di sale. Infine poco per volta il vino bianco.
Impastare il tutto fino ad ottenere un panetto liscio che lascerete riposare per 10 minuti.
Passato questo tempo riprendere il panetto e stendete l’impasto in una sfoglia sottile.
Ritagliare la sfoglia con una rotella dentata sagomando dei rettangoli di circa 5×10 cm e praticando su ognuno due tagli centrali, paralleli al lato lungo.
Friggete i nastri di pasta nell’olio bollente fino a doratura.
Servite con un’abbondante spolverata di zucchero a velo.

In un robot lavorare a crema il burro con lo zucchero, aggiungere poi le uova, la farina, il lievito e il timo.
Azionare il robot formando così un impasto sbricioloso.
Imburrate e infarinate una tortiera a cerniera e sbriciolate metà dell’impasto sul fondo, versate poi sullo stesso la marmellata ai lamponi Azienda Agricola Pietrangeli e ricoprire con l’altra metà dell’impasto sbriciolato.
Infornare a 180° per circa 40 minuti.
Servite con un’abbondante spolverata di zucchero a velo.

Fare bollire 50 ml di acqua con lo zucchero. Togliare dal fuoco, unire le mandorle tritate mescolare fino ad ottenere un composto omogeneo.
Lasciare riposare in frigo per almeno 1 ora.
Sciogliere il cioccolato a bagnomaria, nel frattempo riprendere la pasta di mandorle dal frigo e lavorandola unire un uovo alla volta, poi il cioccolato ormai fuso, la farina e il cacao e mescolare, infine aggiungere il burro fuso e mescolare fino ad ottenere un composto omogeneo.
Versarlo in uno stampo tondo, disponete poi i lamponi (lavati e asciugati) in modo uniforme su tutta la superficie della torta.
Cuocere in forno a 180° per 35/40 Minuti

In un robot da cucina lavorare a crema il burro con lo zucchero, aggiungere poi le uova, il limone grattugiato, un pò di latte, la farina e il lievito, amalgamare fino a formare un panetto morbido e liscio che andremo ad avvolgere in una pellicola trasparente e a riporre in frigo per almeno mezz’ora.
Trascorso questo tempo riprendete la frolla che potrete utilizzare nelle varie ricette di crostate e biscotti. Per tirare bene la frolla sarà sufficiente sistemarla su un piano da lavoro leggermente infarinato e lavorarla un pò per ridarle elasticità e morbidezza.

Per il Rotolo alle Nocciole:
85 gr di farina di nocciole

10 gr di zucchero
Per la mousse al cioccolato e caffè:
90 gr di cioccolato fondente
3 uova
1 tazzina di caffè espresso
panna per decorare
cacao amaro

Per prima cosa prepariamo la mousse al cioccolato e caffè:
Sciogliamo il cioccolato a bagnomaria, tolto dal fuoco incorporiamo uno per volta i tuorli, mescolando per bene, infine versare il caffè. Montare a neve gli albumi e unirli alla crema di tuorli e cioccolato. Lasciare riposare in frigo per qualche ora.
Preriscaldiamo il forno a 220°.
In una ciotola uniamo la farina di nocciola, zucchero a velo e farina. Uniamo le uova una per volta, alla fine aggiungiamo gli albumi montati a neve delicatamente dal basso verso l’alto per evitare che si smontino.
Foderiamo una teglia rettangolare con carta forno e versare l’impasto livellandolo con una spatola.
Cuociamo in forno per circa 7 minuti, poi togliamolo dal forno e capovolgiamolo su un canovaccio umido cosparso di zucchero a velo.
Togliamo delicatamente la carta forno, arrotoliamola su se stesso il rotolo con l’aiuto del canovaccio e lasciamo raffreddare.
Una volta freddo, srotoliamo di nuovo il rotolo e riempiamolo di mousse al cioccolato e caffè preparata precedentemente.
Avvolgiamolo di nuovo ben stretto e lasciamo riposare in frigo per almeno un’ora.
Serviamo con panna montata e una spolverata di cacao amaro.
