Procedimento:
Sbattere le uova con lo zucchero, aggiungere il burro sciolto, il cioccolato fondente fuso a bagnomaria e infine la panna liquida.
Amalgamate il tutto con lo sbattitore elettrico e versate il composto nei pirottini imburrati e cosparsi di cacao.
Infornate a 180° per 8 minuti (non un minuto in più altrimente il tortino cuocerà anche il cuore che invece deve rimanere cremoso!)
Cospargete con zucchero a velo!

Procedimento:
In una planetaria mettete tutti gli ingredienti, l’uovo, lo zucchero,1/2 bicchiere di latte, 1/2 bicchiere di olio,la scorza grattugiata del limone, la farina, il lievito e amalgamate il tutto.
Nel frattempo sbucciate le mele e tagliatele a tocchetti, versatele direttamente nell’impasto precedentemente preparato e amalgamate ben bene.
Foderate uno stampo a cerniera di 24 cm e versatevi l’impasto con le mele. Cospargete con i pinoli e scaglie di mandorle e infornate a 180° per 30/40 min, fate la prova stecchino prima di sfornare.
Servite con abbondante zucchero a velo.

Iniziamo preparando il Pan di spagna:
Dividete gli albumi dai tuorli e sbattere questi ultimi con metà dello zucchero per ottenere un composto spumoso e gonfio.
Sbattete a parte gli albumi, aggiungete lo zucchero rimasto e unite gli albumi ai tuorli sbattuti precedentemente.
Aggiungete la farina, i semi di una bacca di vaniglia e la fecola di patate setacciate insieme.
Imburrate e infarinate uno stampo rettangolare delle dimensioni di 26X20 e versate l’impasto nello stampo.
Infornate a 180° per 35/40 minuti.
Estraete lo stampo dal forno e fate raffreddare il pan di spagna.
Per la crema diplomatica iniziate con la crema pasticcera: riscaldate il latte in un pentolino con la metà di una bacca e versate il latte riscaldato sul composto a filo, amalgamando con la frusta.
Riportate il composto sul fuoco e mescolate continuamente fino a che la crema non si sarà addensata. Trasferite la crema pasticcera in una ciotola e fatela raffreddare, conservandola con un foglio di pellicola a contatto.
Passate alla crema Chantilly:
Versate la panna, ben fredda, in una planetaria e montatela, quando la panna avrà raggiunto una consistenza corposa, aggiungete lo zucchero a velo setacciato e amalgamatelo alla panna, mescolando con una spatola.
Quando la crema pasticcera sarà completamente fredda, unite la crema chantilly e stemperate le due creme con una frusta, fino ad ottenere una massa spumosa, liscia e omogenea.
Ora dedicatevi agli strati di sfoglia:
Stendete con un mattarello la pasta sfoglia già pronta e ricavate due rettangoli delle dimensioni poco più piccole di quelle del pan di spagna.
Trasferite i due rettangoli su una leccarda ricoperta di carta forno e bucatele con i rebbi di una forchetta.
Cospargete di zucchero a velo e passatele al forno statico a 180° per 12/13 minuti.
Preparate ora la bagna:
Mettete l’acqua e lo zucchero in un pentolino e fate sciogliere bene il tutto, quando avrete ottenuto uno sciroppo denso, spegnete il fuoco e aggiungete il rum.
Potete ora comporre la torta diplomatica:
ponete su un piatto da portata una delle due sfoglie e cospargetela con la crema diplomatica.
Prendete ora lo strato di Pan di spagna e adagiatelo sulla crema per formare il secondo strato, bagnate abbondantemente il Pan di spagna con la bagna al rum, quindi cospargetelo con uno strato di crema diplomatica.
Terminate ora con l’ultimo strato di sfoglia, cospargete abbondante zucchero a velo ed ecco pronta la vostra torta diplomatica.

200 gr di biscotti secchi
70 gr di burro
50 gr di zucchero
Per il Ripieno:
500 gr di ricotta
125 gr di mascarpone
130 gr di zucchero
100 gr di cioccolato fondente

100 gr di cioccolato bianco

Frullate i biscotti secchi con lo zucchero, unite il burro fuso e amalgamate.
Rivestite il fondo di stampini monouso con un disco di carta forno, distribuite il composto di biscotti e pressate bene fino ad ottenere uno strato di circa 1/2 cm.
In una ciotola lavorate il mascarpone e la ricotta con lo zucchero. Dividetelo in tre parti uguali e a ciascuna unite un tipo di cioccolato differente, finemente tritato.
Con l’aiuto di un sac à poche distribuite le tre farce negli stampini, alternandole.
Trasferite in frigo e fate riposare per almeno mezz’ora.
Trascorso il tempo di riposo, sformate i tortini, guarnendoli con scaglie di cioccolato.

Montate i tuorli con lozucchero, aggiungete il mascarpone e mescolate a crema, dividete il composto in due ciotole, incorporate in una il cioccolato precedentemente sciolto a bagnomaria e nell’altra lo sciroppo alla menta.
In una pirofila disponete uno strato di pavesini bagnati nel latte, coprite con il composto di mascarpone e cioccolato, cospargete di cacao, distribuite un secondo strato di pavesini, coprite con il composto di mascarpone e menta, spolverate la superficie con il cacao, decorando a piacere, conservate il tiramisù in frigorifero per almeno un’ora prima di servire.

60 gr di zucchero a velo
15 gr di miele di acacia
30 gr di tuorlo
Scorza di limone grattugiata
170 gr di farina

Foglie di menta per decorare
CREMA ALLO YOGURT:
200 gr di yogurt bianco intero
30 gr di zucchero a velo
200 ml di panna fresca
200 gr di fragole fresche

Aggiungete i tuorli uno alla volta, appena il composto risulterà amalgamato e cremoso, salate.
Setacciate la farina e aggiungetela al composto.
Formate un mattoncino che avvolgerete in una pellicola riponendola in frigorifero per 30 minuti.
Accendete il forno a 160°.
Stendete la frolla in una teglia per crostate, bucherellate con una forchetta il fondo, infornate per circa 20 minuti, sfornate e lasciate raffreddare.
Montate, intanto, la panna ben fredda in una terrina, unite lentamente lo yogurt e lo zucchero a velo, mescolando dolcemente fino ad ottenere una crema vellutata.
Versate la crema sul fondo della crostata e distribuite le fragole, tagliate a metà, a ventaglio su tutta la superficie.
Decorate con qualche foglia di menta.
